Garlic Parmesan Chicken Pasta - Mulled Wine Pairing

Mulled Wine recipe:
1 bottle of our Grand Canyon Wine Co. Retreat GSM Blend
1 stick of cinnamon
1 star anise
6 whole allspice
1 orange
2 tablespoons honey
3 shakes of ground nutmeg
1 handful of cranberries
1/4 cup of pomegranate juice
Ingredients:
For the Chicken -
1 pound boneless, skinless chicken breast
1 tablespoon olive oil
salt and pepper to taste
For the Pasta -
8 oz fettuccine pasta, or whatever pasta you prefer
For the Sauce -
4 cloves garlic, minced
1 cup heavy whipping cream
1 cup grated parmesan cheese
1 cup chicken broth
1 teaspoon italian seasoning
fresh parsley
Instructions:
Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let it rest before slicing.
Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and then reduce the heat.
Add Cheese: Gradually whisk in the Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
Combine: Add the cooked pasta and sliced chicken to the sauce. Toss to coat everything evenly in the creamy sauce.
Serve: Garnish with fresh parsley if desired and serve immediately.
